The ingredients needed to prepare Vegetable Soup:

  1. You need 1 of Bag of baby carrots (cut in halves).
  2. You need 2 of Potatoes (cut into squares).
  3. Prepare 1/2 large of Onion (chopped into big squares).
  4. Get 4 of Celery, chopped.
  5. Provide 1 of Zucchini (cut into thick circles, then halved).
  6. Use 2 can of Diced Tomatoes.
  7. You need 1 1/2 cup of Frozen Green Beans.
  8. Use 1 cup of Frozen Corn.
  9. Take 3 can of Vegetable Broth.
  10. Take 1 can of Chicken Broth.
  11. Prepare 2 tbsp of Parsley.
  12. Get 1 tsp of Italian Seasoning.
  13. Get 5 tsp of Minced Garlic.
  14. Use 2 tsp of Salt.
  15. Take 1/4 tsp of Pepper.
  16. Get 3 tbsp of olive oil.

Steps to make Vegetable Soup:

  1. Add olive oil to lg pot. Saute onions,carrots,and celery for 4 mins on medium heat..
  2. Add garlic,stir for 1 minute. Add broths..
  3. Add tomatoes, potatoes, parsley, Italian seasoning, salt and pepper. Bring those to a boil, then add green beans and zucchini. (For firmer zucchini,add last with the corn.).
  4. Cover and reduce heat to medium low to simmer for 25-30 minutes..
  5. Add corn and stir.Let simmer for 5 minutes. Done! (Let stand for at least 30 minutes and stir occasionally to let flavor soak in.).
